For the Blackberry Lavender Ice Cream:
- 2 cups of fresh blackberries
- 1 cup of whole milk
- 2 cups of heavy cream
- 1 cup of granulated sugar
- 1 tablespoon of dried lavender buds
- 4 large egg yolks

Instructions
Step 1: Preparing the Blackberry Lavender Ice Cream
Start by placing the blackberries, milk, heavy cream, granulated sugar, and dried lavender buds in a saucepan. Heat the mixture over medium heat until it reaches a gentle simmer, stirring occasionally.
In a separate bowl, whisk the egg yolks until smooth. Slowly pour a small amount of the hot blackberry mixture into the egg yolks, whisking constantly. This step is important to temper the eggs and prevent them from curdling.
Pour the tempered egg mixture back into the saucepan with the remaining blackberry mixture. Continue cooking over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve to remove any solids or lavender buds. Stir in the vanilla extract. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
Step 2: Baking the Cookies
Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined. Gradually add the dry ingredient mixture to the wet ingredients, mixing until the dough comes together.
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Use the palm of your hand to gently flatten each ball. Bake for 10-12 minutes, or until the cookies are set around the edges. Remove from the oven and let them cool completely.
Step 3: Assembling the Ice Cream Sandwiches
Once the ice cream mixture is chilled and the cookies are cooled, it’s time to assemble the sandwiches. Take a scoop of the blackberry lavender ice cream and place it on the flat side of one cookie. Top it with another cookie, flat side down, and gently press to create a sandwich.
Repeat this process until all the cookies and ice cream are used. If desired, roll the sides of the sandwiches in additional dried lavender buds for added visual appeal and flavor.
