Sesame Soba Noodles

Ingredients:

  • 8 oz. soba noodles
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped scallions
  • 2 tablespoons toasted sesame seeds

 

Instructions:

  1. Cook soba noodles according to package instructions. Drain and rinse with cold water.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes.
  3. In a large bowl, toss together the cooked soba noodles, chopped scallions, and sesame seeds.
  4. Pour the dressing over the noodles and toss to combine.
  5. Serve the sesame soba noodles cold or at room temperature.
